This past weekend was not at warm as I hoped for, but we still managed to have some fun in the water. My In-Laws brought over this cute pool and the little one had a great time "swimming".

She insisted in having either me or my husband come into the pool with her, hence the above photo. The canopy made it a little difficult for us, but we managed to get our feet wet.
I tried another appetizer this weekend. It was this crab dip and I'm happy to report it gets 5 stars from everyone. So yummy! I made it on Sunday for the In-Laws and we all liked it so much I offered to bring it to a party I was going to on Monday.
On Monday, I whipped up another batch, threw it in the crockpot and went about my Monday morning. Just before leaving for the party I picked up the crockpot and poured the dip into a pyrex container with a lid for easier transport. I used pot holders, since everything was still hot, and well... the crockpot slipped out of my hands and crashed down onto the pyrex... NOT GOOD!
The pyrex shattered with all of my dip in it! You can imagine I was not a happy camper. I ended up taking the left over dip from Sunday. A good back up, I guess. I was still very upset. I had tweaked the recipe and made some serious improvments. Thank goodness the party was for my best friend's son, so my bestie handed me a White Sangria when I walked in and everything was better.
Here's the recipe after I tweaked it a little. Or you can find it in original form on crockpot365.
- 1/2 pound crab meat (I bought claw meat)
- 2 8oz packages of cream cheese
- 1/4 cup of mild mango salsa
- 1/2 cap of Rotel chilies and tomatoes (drain really well)
I used my 2 quart crockpot.
Directions: Cube the cream cheese. Put all ingredients into the crockpot. Stir a little. Cook on low for 2 to 3 hours. Stir every 30 to 45 mins. Remove from crockpot to serve. Serve with bread and or crackers.
On another shattered glass note, a juice glass jumped out of the dishwasher today and broke all over the kitchen floor. Needless to say, I am really tired of cleaning up glass and everyone is wearing shoes in the kitchen these days.
